In Japanese cuisine, we often utilize kazarigiri (飾り切り)—the art of decorative vegetable cutting—to elevate a dish’s visual harmony. While traditional knife skills take years of dedicated practice to master, a simple vegetable or cookie cutter achieves a similar elegance effortlessly. Sakura (cherry blossom) and Ume (plum blossom) shapes are common in Japanese households. I used an Ume cutter for the banana here, but you can use whatever shape you have on hand.

Recently, I have been adding a dollop of coconut whipped cream to this toast. It is completely vegan, beautifully light, and pairs perfectly with the earthiness of the matcha and the tartness of the raspberries.
Matcha Fruit Toast
Ingredients
- 2 slices Sourdough bread or your bread of choice
- 2 tbsp Matcha Paste
- ½ Banana
- 10 Fresh raspberries
- 1 tbsp Red Bean Paste optional
- 1 tsp Honey or maple syrup for vegan
- 1 tsp Chia seeds
- Garnish: Edible flowers optional
- Optional: Coconut whipped cream
Instructions
- Toast the Bread: Toast your two slices of sourdough until they reach a deep, golden-brown crispness.
- Prep the Fruit: Slice the banana into ½-inch thick rounds. If desired, use a small vegetable or cookie cutter to punch out flower shapes.

- Spread the Base: Generously spread the matcha paste over the toasted sourdough. If using, add a layer or dollop of the red bean paste.

- Decorate: Arrange the banana slices and raspberries beautifully over the toast.

- Garnish and Serve: Drizzle with honey, sprinkle evenly with chia seeds, and finish with a few edible flowers or a dollop of coconut whipped cream if using.
