Ama koji panna cotta with blueberry sauce

Seeking a sweet treat that feels genuinely nourishing without sacrificing taste? This Ama Koji Panna Cotta is one of my personal favorites. Spending my days creating and tasting traditional pastries means I am constantly surrounded by refined sugar. As a professional pastry chef, my daily routine revolves around tasting refined pastries, rich creams, and sugary confections. On my days off, I naturally seek balance and step away from refined sugar—yet my craving for a sweet bite after dinner or a mid-afternoon treat remains. This recipe is my personal answer to that craving: an elevated, guilt-free luxury.

That is where this Ama Koji Panna Cotta comes in. By using homemade Ama Koji (Japanese fermented rice paste), this recipe completely eliminates refined sugar while delivering a silky, luxurious texture.

Why You Will Love This Ama Koji Panna Cotta

In Japan, rice-koji amazake is celebrated not just as a traditional ferment, but as a drinkable beauty serum (飲む美容液). Because the fermentation process breaks down nutrients into their most bioavailable states, your body absorbs them effortlessly—nourishing your skin from the inside out.

Here is why this wellness dessert belongs in your routine:

  • 100% Refined Sugar-Free & Naturally Energizing: The natural, soothing sweetness comes entirely from fermentation-derived glucose. Unlike refined white sugar, this natural glucose provides instant energy to support healthy skin cell turnover without the harsh insulin spikes or sugar crashes.
  • Inner-Beauty & Skin Support: Packed with essential amino acids and a complex of B-vitamins (B1, B2, B6, and Niacin), Ama Koji provides the fundamental building blocks for collagen, helps balance sebum production, and prevents fatigue-induced skin dullness.
  • Gut Health & Radiance (“Skin is a Mirror of the Gut”): In Japanese wellness culture, clear skin starts in the digestive tract. The prebiotics (oligosaccharides) and dietary fibers in raw Ama Koji feed your good gut bacteria, promoting digestion and flushing out toxins for a naturally glowing complexion.
  • Active Probiotic Blueberry Topping: By folding raw Ama Koji into the blueberry sauce after it cools to 40°C, 100% of the live enzymes, beneficial microbes, and delicate floral aromas stay completely intact.

  2. Gently press 3 or 4 berries against the side of the pot to release fruit pulp while keeping most berries whole.
  3. Stir in the cornstarch slurry (1 tsp cornstarch + 1.5 tsp water) and let it boil gently for 30–60 seconds while stirring continuously until clear, glossy, and thickened.
  4. Remove from heat and let cool until warm (~40°C).
  5. Gently fold in 60–70g raw Ama Koji paste. Cover and set aside to cool completely.

2. Bloom the Gelatin

Storage & Frequently Asked Questions

How long can this be stored?

Keep the panna cotta cups covered in the refrigerator for up to 3 days. Because the blueberry sauce contains unheated raw Ama Koji, consuming it within 3 days ensures you get the absolute best flavor and maximum benefit from the active enzymes and probiotics.

Can I freeze this panna cotta?

Not recommended for the panna cotta itself—freezing breaks down gelatin’s protein network, causing it to weep liquid (syneresis) and turn grainy when thawed. However, yes, you can freeze the blueberry sauce! Store the sauce in an airtight container in the freezer for up to 1 month and thaw it overnight in the fridge before using.

Can I use plant-based milk instead of regular milk and heavy cream?

Yes! Unsweetened oat milk or unsweetened soy milk make fantastic substitutes. Oat milk’s natural creaminess pairs exceptionally well with the malted sweetness of Ama Koji. If you skip heavy cream entirely, replace it with an equal volume of your favorite plant-based milk (or full-fat canned coconut milk for extra richness).

Can I make this panna cotta with store-bought drinkable Amazake instead of Ama Koji paste?

Yes, but with two small tweaks! Commercial store-bought amazake is a drinkable liquid rather than a thick, concentrated ferment paste like homemade Ama Koji. If you use store-bought amazake:

1. Adjust the Liquids: Replace the 200g Ama Koji paste and 270ml milk with 300ml store-bought amazake and 170ml milk (keeping the 100ml heavy cream).

2. Check for Sweetness: Because store-bought amazake is less sweet and more diluted, taste the warm base before adding gelatin. You may want to add 1 to 2 teaspoons of honey or maple syrup to achieve the right sweetness level.

  • Storage: Cover and refrigerate for up to 3 days. Consuming within 3 days ensures maximum probiotic benefit from the raw Ama Koji in the sauce.
  • Freezing: Do not freeze the panna cotta cups, as gelatin breaks down and turns grainy upon thawing. The blueberry sauce, however, can be frozen in an airtight container for up to 1 month.
  • Plant-Based Option: Replace whole milk and heavy cream with unsweetened oat milk or soy milk (or full-fat canned coconut milk for extra body).
  • Using Store-Bought Amazake: If using drinkable store-bought amazake instead of homemade paste, use 300ml amazake + 170ml milk + 100ml heavy cream. Taste and add 1–2 teaspoons of honey if needed.
