Tucked inside a gorgeous West Village brownstone, this restaurant holds only about 9 to 10 tables. Therefore, it truly feels like stepping into a classic, vintage Chicago speakeasy. The room is always packed to the brim with energy, charm, and the intoxicating scent of sizzling steaks. Even though we went during the lunch hour, the room was completely packed and buzzing.

Before jumping into the food, let’s talk about what makes this place an absolute phenomenon. 4 Charles is operated by Brendan Sodikoff’s renowned Hogsalt Hospitality. For context, this is the team behind Chicago’s legendary Au Cheval and NYC’s beautifully resurrected Monkey Bar. The restaurant has earned a cult-like status because it effortlessly pairs old-school luxury with intimate club vibes.

Starting the Main Event: Crisp Greens and Legendary Beef

To begin our meal, we ordered the Little Gem Salad ($25.99). You can easily add a baked crab cake for an extra $17.99, but we opted to keep it simple. Surprisingly, it completely blew us away. The greens were beautifully crisp and lightly dressed with avocado and a magnificent blend of fines herbes. Specifically, the kitchen uses dill, parsley, chives, and mint. What really elevated it for me was the distinct, elegant aroma of fresh tarragon. It was simple, refreshing, and flawlessly executed.

Immediately after clearing the salad plates, it was time for the main event.
We dived headfirst into the famous 10oz Double Wagyu Cheeseburger ($38.99), upgraded with a Farm Egg (+$4.49) and Thick-Cut Bacon (+$8.99). This masterpiece features griddled and pressed Snake River Farms Wagyu beef with American cheese, pickles, onions, and Marie Rose sauce.

In addition to the incredible flavor, the execution was pure theater. Our server came out in pristine white gloves to perform a flawless tableside show. He expertly mixed the rich, oozy part of the fried farm egg yolk and poured it right over the burger. Ultimately, it tasted every bit as decadent and spectacular as I had expected. Honestly, it was so good that we ended up ordering two additional burgers to take out for our pastry team back at work. Because they are always eager to try the city’s best spots, they absolutely loved them.

To round out the savory course, we also shared the Roast Prime Rib of Beef – Chicago Cut ($104.99) and the Cacio e Pepe Carbonara Pasta ($32.99). The prime rib was a gorgeous, incredibly tender cut of beef that completely lived up to the Hogsalt steakhouse reputation. Furthermore, the carbonara brought a wonderfully rich, creamy, and beautifully seasoned twist to the table.

For our sides, we chose the Golden Fries ($13.99) and the Elote Style Corn ($16.99). The fries were perfectly crisp. However, the Elote Style Corn carried a significant, spicy kick that caught us a little off guard. Please keep that in mind if you prefer milder sides.

The Dessert Finale: A Pastry Performance

As someone who pays deep attention to the craft of desserts and textures, I was incredibly eager to see how 4 Charles handled their final course. We ordered two of their most famous treats:

    • Valrhona dark chocolate, chantilly cream, chocolate shavings & Oreo crust.
    • This was an absolute masterpiece. The filling had an incredibly smooth, silky texture that melted instantly. You can immediately tell they are sourcing top-tier ingredients—specifically the Valrhona chocolate, which gives it a deeply rich, balanced profile without being overly sweet. Paired with the crunch of the Oreo crust, it was easily the standout dessert of the night.
  • Sundae Royale ($23.99)
    • Vanilla, chocolate, and strawberry ice cream, hot fudge & assorted candies.
    • This dessert is pure nostalgia and absolutely gorgeous for photos. It’s highly interactive and very “Instagrammable” with all the candy toppings. In terms of flavor, it tastes like a classic, high-quality traditional ice cream sundae—fun to share, but the chocolate pie is where the true culinary craftsmanship shines.

So, how did we actually secure a seat in a 9-table restaurant? I have to give all the credit to my amazing friend, who is a literal genius at booking ultra-competitive NYC hotspots. Here is the secret blueprint she shared with me:

  1. Aim for 4 People, Not 2: 4 Charles only has two tables in the entire layout meant for parties of two. Trying to book for a pair is almost impossible. Your odds increase dramatically if you look for a table of 4.

Dining at 4 Charles Prime Rib was a fantastic, highly memorable experience. Between the old-school ambiance, the white-glove burger presentation, and that flawless Valrhona chocolate pie, it fully earned its reputation.
