When I need some sugar to wake up some morning, I make this matcha fruit toast. It’s healthy, with a lot of fibers and vitamins, plus has some sweetness from the fruits and the matcha paste. I don’t get the same guilt that I sometimes get after I eat pancakes or waffles. In this recipe, I use a cookie cutter to make the banana look prettier. However, the process is 100% optional, especially for the busy morning.

Cookie Cutter for Banana
Many Japanese households have assorted cookie cutters. Although I call this a cookie-cutter, it’s made for cutting vegetables. In Japanese cuisine, we often cut the vegetable nicely and decoratively. The technique is called “kazarigiri“(飾り切り) in Japanese. However, you need good knife skills to do that. That’s the reason why many people use this cutter. Sakura (cherry blossom) and Ume (plum flower) shaped cutters are commonly used in Japan. I used the Ume one for my banana today, but you can use any cookie cutter you have instead
Perfect Combination with Red Bean Paste
We love red bean paste, and we often eat them with bread. Matcha toast is perfectly paired with the red bean paste. Even though the red bean paste contains a lot of sugar, the red bean has protein, fiber, vitamins, and minerals. So, I believe it’s healthier than peanut butter & jelly. Is Matcha Toast Good for Kids?
II would say, yes!! However, I know that you may have worries about the caffeine content of matcha. And so did I. However, after I read this article from Teaologist, I feel more relaxed about kids consuming the matcha product. According to the article, there are many benefits to children having matcha. Such as preventing flu, improving concentration, and preventing childhood obesity. In fact, I was a super healthy kid although I was brought up in a green tea farm family, and drinking green tea all the time. Of course, my parents told me to not drink green tea at night.
Recent Obsession For My Matcha Toast
I recently discovered this coconut whip cream. Yes, it’s vegan and lighter than real whipped cream. I add this whipped cream to my matcha toast depending on my mood.
Ingredients
- 2 sliced bread (sourdough or any of your choice of bread)
- Matcha Paste
- 2 pieces of Banana
- 10 pieces of Raspberry
- Red Bean Paste (optional)
- Honey
- chia seeds
- Edible flower (optional)
Instructions
- Toast two slices of sourdough bread.
- Slice your banana into about ½ thick . Make a flower shaped banana slice by using a cookie cutter. (optional)
- Spread the matcha paste onto the toast. Spread the red bean paste if you like.
- Decorate the banana slice on the top. Decorate raspberries.
- Drizzle honey on the top. Sprinkle chia seeds. Decorate with edible flower if you have.
