Fold to Create Diplomat Cream:Gently fold the whipped cream into the smoothed pastry cream using a silicone spatula. Stop mixing when it is 80% to 90% combined. Do not overmix, or the cream will break and become runny. Transfer the Diplomat Cream to a piping bag. Fill the Tart Shell:Pipe the Diplomat Cream into your pre-baked, cooled 21 cm Pâte Sucrée shell until it is about 80% filled. Smooth gently if needed, leaving room at the top. Prep the Berries:Wash and thoroughly dry all berries. Slice large strawberries into varied halves, quarters, or asymmetrical shapes. Leave smaller berries whole. Arrange the Berries (Asymmetrical Style):Arrange the fruit dynamically across the cream, mixing different directions and sizes. Pack the berries tightly to ensure no cream is visible beneath them. Use soft raspberries and small blueberries to plug any remaining small gaps. Garnish & Serve:Finish with delicate edible flowers or micro-mint sprigs. Keep chilled in the refrigerator until ready to slice and serve.
