Shio Koji Chicken Karaage (塩麹唐揚げ)

Super juicy Japanese double-fried chicken marinated in umami-rich shio koji, garlic, and ginger. The living enzymes in shio koji deeply tenderize the meat, while a two-step frying method produces a light, crackly crust without scorching.

Ingredients

For the Chicken & Marinade

  • 1.2 lbs chicken thighs (boneless, skin-on preferred) or chicken breast, cut into bite-sized pieces, 540g
  • tbsp shio koji (approx. 10% of meat weight)
  • tsp grated garlic (approx. 2 cloves)
  • tsp grated ginger
  • tbsp sake

For Frying & Serving

  • ½ cup potato starch katakuriko, for dredging
  • 3-4 cups neutral oil canola, vegetable, or peanut oil, for deep frying
  • 1 lemon cut into wedges (optional, for serving)

Instructions

  • Cut chicken into uniform, bite-sized pieces and place into a bowl (or sealable plastic bag). Add the shio koji, grated garlic, grated ginger, and sake. Massage thoroughly to coat every piece evenly. Cover tightly and refrigerate for 3 hours (30 minutes minimum if short on time).

  • Remove chicken from the fridge. Gently wipe or scrape off any heavy excess shio koji from the surface of the meat so it doesn't burn in the oil. Lightly coat each piece with potato starch, shaking off any excess.

  • Heat 2 inches of neutral oil in a deep pot to 160°C–170°C (320°F–340°F). Gently add the chicken in batches to avoid overcrowding and fry for 2 minutes.

  • Transfer chicken to a wire rack and rest for 3 minutes. Carryover heat will finish cooking the interior safely while retaining juices.

  • Increase oil temperature to 170°C–180°C (340°F–355°F). Return the rested chicken to the oil and flash-fry for 1.5 to 2 minutes until the exterior turns golden brown and extra crispy.

  • Transfer to a wire rack to drain briefly. Serve hot with fresh lemon wedges and shredded cabbage.

Notes

Chef's Temperature Tip: Shio koji contains natural sugars and fermented rice solids that scorch much faster than standard soy sauce marinades. Keep your initial fry temperature low (160°C–170°C) and wipe off excess marinade before starching.
  • Chicken Breast Option: Shio koji works wonders on lean chicken breast, making it surprisingly soft, tender, and juicy.
  • Make-Ahead / Freezing: You can freeze raw marinated chicken for up to 1 month, or fully double-fry, cool, and freeze.
  • Air Fryer Reheating: Reheat pre-cooked frozen karaage in an air fryer at 380°F (190°C) for 6–8 minutes to restore full crispiness without adding extra oil.
  • Shoyu Koji Variation: Substitute shio koji 1:1 with shoyu koji for a deeper, darker umami profile.
