Ingredients

The Syrup Version (Recommended)

  • 250 g Canned coconut milk approx. 1 cup
  • 30 g to 60g Water approx. 1/8 to 1/4 cup; omit for a thicker, yogurt-like consistency
  • 40 g Matcha syrup or paste approx. 2 tbsp
  • 45 g Chia seeds approx. 1/4 cup

The Powder Version

  • 250 g Canned coconut milk approx. 1 cup
  • 3 g to 5g High-quality matcha powder sifted (approx. 1 to 1.5 tsp)
  • 20 g to 40g Maple syrup or honey approx. 1 to 2 tbsp, adjust to taste
  • 45 g Chia seeds approx. 1/4 cup

Instructions

  • Combine the Base: In a glass jar or small airtight container, add the canned coconut milk and water (if using). Whisk in your matcha syrup. (If using the powder version: sift the matcha powder into a small bowl, add a tablespoon of milk to create a smooth, clump-free paste first, then whisk it into the remaining milk along with your sweetener).
  • Add the Seeds: Add the chia seeds to the liquid mixture and whisk vigorously with a small whisk or fork until completely distributed.
  • The Second Whisk (Crucial Step): Let the mixture sit at room temperature for 5 to 10 minutes until the chia seeds begin to bloom. Whisk thoroughly a second time to prevent the seeds from settling in a thick layer at the bottom.
  • Chill to Set: Cover tightly and place in the refrigerator for at least 1 hour, or ideally overnight, until perfectly plush and set.
  • Serve: Stir gently before serving. Top with your favorite seasonal fresh fruit and a generous sprinkle of granola for contrast.

Notes

Storage Tips for Matcha Chia Pudding: Store covered in an airtight container in the refrigerator for up to 3 to 5 days. Because matcha is sensitive to light and air, storing it toward the back of the fridge helps preserve its beautiful, vibrant green color. If the pudding becomes too thick after a few days, simply stir in a splash of coconut milk to loosen the texture before serving.
