- 4 fresh medium figs (cut into wedges, about 3 to 4 wedges per roll)
- 3.5 oz Brie cheese (cut into 6 to 8 thick strips)
- 6-8 slices Prosciutto
- 6-8 Spring roll wrappers (harumaki skins)
- 1 tbsp All-purpose flour + 1 tbsp Water (mixed together into a flour slurry)
- Coarsely ground black pepper
- Neutral oil for deep frying (vegetable, canola, or rice bran oil)
For Serving & Dipping:
- 1-2 tbsp Honey (for drizzling)
- 1 tbsp Balsamic vinegar or balsamic glaze (for dipping)
- 1 tbsp Whole grain or Dijon mustard (optional, for dipping)
Slice the fresh figs into wedges. You will need 3 to 4 wedges per spring roll for a juicy, fruit-filled bite.
Cut the brie cheese into thick strips that fit within the spring roll wrapper. Mix 1 tablespoon flour with 1 tablespoon water in a small dish to make your flour slurry.
Lay a spring roll wrapper flat on a cutting board with a corner pointing toward you (diamond orientation). Using your finger, spread a thin border of flour slurry along all four outer edges of the wrapper.
About one-third of the way up from the bottom corner, place 3 to 4 fig wedges horizontally.Top with a strip of brie cheese.
Drape a slice of prosciutto over the top, and add a light dusting of coarsely ground black pepper.
Fold the bottom corner up over the filling, roll forward once.
Fold the left and right corners inward, and roll snugly toward the top. Press the edges firmly to create an airtight seal (this keeps the cheese from leaking into the oil!).
Heat 1 to 2 inches of oil in a deep pot to 340°F (170°C). Carefully lower the spring rolls into the hot oil. Deep fry for 2 to 3 minutes, turning occasionally, until the wrappers are crispy and golden brown. Transfer to a wire rack to drain off excess oil.
Serve the hot spring rolls on a plate. Drizzle generously with warm honey and serve immediately with balsamic vinegar and optional mustard on the side for dipping.
