Soaking Syrup (Optional)
- 50 g Water
- 25 g Granulated white sugar
- 10 g Kirschwasser (Cointreau, Grand Marnier, or Grenadine syrup)
Crème Chantilly
- 473 g Heavy whipping cream (1 small bottle, ice cold)
- 47 g Granulated white sugar
- 1/2 tsp Vanilla bean paste or vanilla extract
Fresh Fruit & Decoration
- 350 - 400 g Fresh strawberries (washed, thoroughly dried, and sliced)
- Optional decorative border: Crushed freeze-dried strawberries (toasted sliced almonds, or sponge crumbs)
Prepare the Soaking Syrup & Cream
Combine water and sugar in a small heatproof bowl, microwave for 20 seconds until dissolved, stir in your choice of liqueur or syrup, and cool completely in the refrigerator.
In a cold bowl set over an ice bath, combine heavy whipping cream, sugar, and vanilla. Whip until medium-stiff peaks form, then transfer half of the cream to a separate bowl and chill in the refrigerator for final exterior masking.
Continue whipping the remaining cream until firm, sharp peaks form for interior layering and crumb coating—taking care not to overwhip.
Assemble the Interior Layers
Place the bottom sponge layer on a cake board or turntable. Brush the top lightly with cold soaking syrup.
Spread a thin layer (~5mm) of firm Crème Chantilly over the sponge.
Arrange sliced strawberries in concentric circles, leaving about a 0.5 cm to 1 cm (1/2 inch) margin of plain cream around the outer edge to prevent fruit from poking through the sides. Press fruit gently into the cream.
Cover strawberries with another layer of firm cream, filling all air gaps.
Place the second sponge layer directly on top, press gently to level, and brush top with syrup. Repeat cream, strawberry placement (with margin), cream layer, and cap with the top sponge layer.
Crumb Coat & Chill
Brush top sponge layer with remaining syrup. Apply a generous scoop of firm cream to the top, smooth it flat, and push excess cream down the sides to seal in loose crumbs.
Chill the cake in the refrigerator for 15 minutes to set the structure.
Final Masking (Nappe) & Decoration
Whip remaining cream slightly to medium peaks with a gently drooping tip ("tsuno ga ojigi suru").
Apply a smooth final coat over the top and sides using minimal spatula strokes (2 to 3 movements per side) to prevent a grainy texture.
Press crushed freeze-dried strawberries or toasted almonds along the bottom border.
Pipe decorative cream waves or rosettes on top, and arrange whole and sliced strawberries.
Chill for 2 to 4 hours before slicing.
